You might take a look at the late Edmund V. Gillon, Jr.'s "Cut and Assemble a Western Frontier Town" from Dover Publishing--it's an oldie, I seem to remember it from when I was a kid 30 years ago, and it's US HO model-train scale (1;87.1), but it should be simple to scan and enlarge. Smith's "Cut & Assemble an Old-Fashioned Train in Full Color", same publisher. Amazon link: http://www.amazon.com/Assemble-Old-Fashioned-Train-Childrens-Activity/dp/0486253244 Hope this helps!

Also, you might check out the various downloadable Western buildings from Fiddler's Green.
